The group was paying 25–30% commissions to DoorDash, Uber Eats, and OpenTable on every order and reservation — fees that were destroying margins on an already thin-margin business. More painfully, they owned none of the customer data, making loyalty programs and re-marketing impossible. They needed to own their digital ordering and reservation stack.
